Juicy dark cherry and bright pomegranate form a layered red-fruit core, rounded by a smooth nougat sweetness. The beans undergo a thermal shock at 80 °C before rapid cooling, then ferment for 90 hours with added mosto juice, a process that enhances clarity, depth and flavour in the cup.
